    How Do Induction Cooktops Work?

    Induction cooking is unlike electric and gas cooking, as it bypasses heating the cooktop surface and goes right to heating the pot - which uses less energy, offers more control, and allows for quicker cooking.

    Induction cooktops require the use of ferric content cookware, including steel, iron, and nickel, in order to work properly. There is no exposed coil, open flame, or heated surface on induction cooktops. Induction cooking uses electromagnetism to send currents into atoms and create friction in a metal pot, making the metal the heating element. The heat generated in the pot or cooking vessel is transferred to its contents, so nothing outside the vessel is affected by the electromagnetic field. You can even place ice cubes on the cooktop surface next to a boiling pot of water - only the pot is hot, not the cooktop surface.

    A magnetic induction cooktop may cost more than an electric or gas cooktop, but operates at much higher efficiency - and even feature sensors that adjust the energy setting to the pot size, as well as a broader range of settings than traditional cooktops.
