Gas, Electric, or Induction Cooktops: Which Should You Choose?

A new cooktop is an invaluable addition to your kitchen, and one that can make your cooking routine much easier and convenient. Cooktops have come a long way from basic four-burner models. When choosing your new cooktop, keep your needs in mind and know that cooktops come in a range of styles and offer a variety of features to work with your lifestyle and budget. Read on for a description of gas, electric, and induction cooktops to discover which type could best complement your lifestyle and kitchen.

Electric cooktops feature smooth, sleek ceramic models available in a variety of colors. Many electric cooktops feature variable-size elements and warming zones, or even a bridge element, which combines two of tree elements into one large cooking area ideal for oversized pans. Some electric cooktops can even be recessed to be flush with your countertop. Smooth cooktops are easy to clean, but call for special cleaners for ceramic glass. Some electric cooktops even feature touch-controlled capabilities, requiring no knobs, and offer such features as automatic shut-off sensors when an unoccupied element is left on and a control-lock feature to safeguard against accidental activation.

Gas cooktops often feature precise temperature controls and sealed surface burners to contain spills for easy clean-up. Some gas cooktop models feature "gas-on-glass," which resembles electric cooktops, as the sealed burner is mounted directly on the ceramic cooktop, combining easy cleaning of an electric cooktop with precise gas cooking. Most gas cooktops' cast-iron and enamel-coated grates are dishwasher safe. Most experts agree that gas cooktops excel at high-temperate cooking, as they respond instantly to temperature adjustments.

Induction cooktops tend to be a bit pricier than electric or gas cooktops, but for good reason. Induction cooktops contain a safer, cooler cooking surface, as they use electromagnetic technology to heat only the plan, which leaves the burner plate much cooler than a gas or electric burner. Induction cooktops allow for quicker, more energy-efficient heating and a safer cooking experience. In fact, induction cooktops can even detect the size of the pan sitting on a burner and automatically adjust energy output to that pan.
